Galettes des Rois – Notre top à Liège & province

Savez-vous que le sens du mot Épiphanie en grec ancien est:

“la compréhension soudaine, l’illumination presque mystique parfois, d’un fait global, une expérience intime et pleine d’émotion, apte à créer l’inspiration du poète, de l’écrivain, du peintre…” et je rajouterais … du gourmet…

Je vous souhaite donc de nombreuses épiphanies pour les mois et les années à venir…

On est donc parti à la recherche des meilleures galettes et gâteaux des Rois à Liège et en province… Ces galettes de frangipane et de pâte feuilletée avec cet effet à la fois croquant et fondant font qu’on se sent un peu roi à chaque bouchée… pour autant qu’elles soient bien réalisées et pas trop sèches comme c’est malheureusement parfois le cas…

Dans la province de Liège la tradition des galettes des rois est vivace et il n’est pas un boulanger qui n’en propose. Certains vont se contenter de la traditionnelle frangipane et d’autres vont la décliner de manière originale avec une compote de pomme ou de la confiture d’abricot.

Nous en avons dégusté plus d’une dizaine à travers toute la province. Voici donc nos préférées… On s’est basé essentiellement sur le goût et la texture du feuilleté et de la frangipane.

On commence par une excellente boulangerie à Ayeneux sur la commune de Soumagne. On les connaissait pour leurs pains (surtout la baguette traditionnelle) et pour quelques pâtisserie. Mais ici c’est pour leur galette des Rois qu’on vous en parle…
